A Life Shaped by Water, Family and Friendship

From the time he was a small boy- barely three or four years old- Jeff was on the water with his dad, learning the art of fishing. Whether it was the salty Texas coast or the old creek waters near home, fishing quickly became part of his identity. When his dad couldn’t be there, Uncle Larry stepped in, and together they helped shape Jeff’s lifelong love of the outdoors.

After graduating from Seguin High School in 1992, Jeff began building his future. He worked alongside his father as a fabricator, and whenever Dad wasn’t on a plant erection job, Jeff was back on the water with his dad and Uncle Larry.

Jeff later attended Texas Tech University, where he worked on a research team developing strategies for urban lake fisheries in Lubbock. His passion for conservation grew and he became a cofounder of the Saltwater Conservation Association of Texas. He went on to earn his Bachelor of Science in Biology from Texas State University in 2010.

Career, Adventure and the Call of the Coast

During college, Jeff discovered a growing interest in cooking and hospitality, a passion that eventually led him to Dallas, where he became the Dining Room Supervisor at Embassy Suites Outdoor World in Grapevine, Texas. Over the next 23 years, Jeff worked in many facets of the restaurant industry, building a reputation for hard work, reliability, and genuine care for the people he served and worked alongside.

In time, Jeff began a new chapter and moved to Phoenix, Arizona, where he joined USAA as a personal property insurance adjuster. He excelled in the role, mentoring new adjusters and guiding them through the complexities of the field with patience and professionalism. Jeff worked claims from several major hurricanes- including Harvey, Irma, and Maria- offering compassion and steadiness to families facing some of their hardest days.

Even while living in Arizona, Jeff’s heart never left Texas- or the water he loved so deeply. Seeking adventure, he purchased an old gold mine and spent countless hours exploring its rugged passages. He encountered javelinas, rattlesnakes, spiders, bats and all the wild creatures that make their home in the desert’s hidden places. Jeff return from these trips with flakes of gold and turquoise stones, now treasured in the family’s rock gardens- small reminders of his curiosity, courage, and love for the outdoors.

Eventually, USAA offered him the chance to transfer back to Texas- back to Rockport, where his lifelong best friend since third grade, Jayson Carleton, lived. Jeff purchased a pedal-powered canoe with a trolling motor and spent every moment he could chasing redfish, trout, and flounder. Later, he restored his father’s old Kenner boat, turning it into a trophy of pride and memory.

Jayson was more than a friend- he was Jeff’s big brother, confidant, and constant companion on the water.

A Heart for Animals and Family

Though he was a fisherman, Jeff was a devoted cat lover. No cat was ever left unfed or unloved. On one trip home to Marion, he found a struggling kitten who couldn’t keep up with its litter. By the time Jeff left that Sunday, the kitten was nearly keeping pace. His family often joked he should have been a veterinarian specializing in felines.

Jeff’s kindness extended to everyone- family, friends, and especially the younger ones: Kaleb, Dylan, Ashton, and many others who felt his quiet encouragement and gentle presence.

He leaves behind cherished memories, laughter, and stories that will be told for years. When we look up, we will see another bright star shining for Jeffrey Scott Foerster!

Jeff will be remembered by his niece, nephews, many cousins, and a large host of dear friends.

God bless Jeffrey Scott Foerster!
